Heart-Healthy Summer Recipe: Hummus and Veggies

Essentially, there are two types of people in this world: those who absolutely adore hummus and those who find it revolting. We're here to speak to both camps.

For those who are already proud members of the hummus fan club, this simplistic take on this classic recipe is creamy, decadent, and represents a world of flavor and versatility, enhancing everything from fresh veggies to pita bread.

And for those who dismiss hummus, consider this: hummus is a powerhouse of nutrition. It is packed with healthy fats from ingredients like tahini (made from sesame seeds) and olive oil, which are known to support heart health and reduce inflammation. These healthy fats also enhance nutrient absorption, allowing your body to benefit fully from the vitamins and minerals in the chickpeas and other ingredients.

Ingredients:

  • 2 (15 oz) cans chickpeas, rinsed
  • ¾ cup extra virgin olive oil
  • 1 lemon juiced
  • Garlic cloves (to your liking)
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 tablespoons paprika divided
  • Parsley only for garnish

Directions:

  • Combine all ingredients except for parsley and 1 tablespoon of paprika in a blender until smooth. Mixture should be moist and fluffy when done mixing. If it isn’t, add some water or more olive oil until everything is smooth.
  • Transfer hummus into a serving bowl and drizzle extra olive oil, parsley, and the other tablespoon of paprika on top for taste.
  • Serve with your favorite vegetables for a heart-healthy and delicious snack!
